Vanilla Chia Pudding Bowl

Ingredients:

  • 1 scoop vanilla protein powder
  • ¼-½ cups unsweetened vanilla almond milk, or other plant-based milk (plus more as needed)
  • 4 Tablespoons chia seeds
  • ½ Tablespoon maple syrup, honey or sweetener of choice
  • ¼ teaspoon vanilla extract, optional
  • Toppings: fruit, coconut yogurt, granola, nuts and seeds, and/or nut butter.


Directions:

  1. In a bowl or mason jar, whisk together milk and protein powder until protein powder has dissolved.
  2. Add chia seeds, maple syrup and vanilla. Stir until well combined.
  3. Let it sit for 5 minutes, give it another stir to break up any clumps. If you don't like the texture, use a high-powered blender instead.
  4. Cover and put the mixture in the fridge to “set” for 1-2 hours or overnight.
  5. Add toppings and enjoy!
