
Vanilla Chia Pudding Bowl
Ingredients:
- 1 scoop vanilla protein powder
- ¼-½ cups unsweetened vanilla almond milk, or other plant-based milk (plus more as needed)
- 4 Tablespoons chia seeds
- ½ Tablespoon maple syrup, honey or sweetener of choice
- ¼ teaspoon vanilla extract, optional
- Toppings: fruit, coconut yogurt, granola, nuts and seeds, and/or nut butter.
Directions:
- In a bowl or mason jar, whisk together milk and protein powder until protein powder has dissolved.
- Add chia seeds, maple syrup and vanilla. Stir until well combined.
- Let it sit for 5 minutes, give it another stir to break up any clumps. If you don't like the texture, use a high-powered blender instead.
- Cover and put the mixture in the fridge to “set” for 1-2 hours or overnight.
- Add toppings and enjoy!
